Autumn time is beetroot time.

As it slowly gets colder and more colourful outside, the vegetable of the month starts to show the colour of the month on your plate too: beetroot! Beets are full of nutrients that strengthen your immune system and get you healthy for the cold season ahead.

From October you are able to find the local harvest at the weekly Luxembourgish markets and, like us, you can be advised on the many recipes that feature beetroot. Vegetable expert Claude Kirsch recommends a beetroot salad; so simple it almost makes itself.

  • peel the beetroots
  • steam the clean beetroots
  • let them cool down and cut them into small pieces
  • finely chop a small onion and add to the beetroots
  • season with vinegar and pepper

Good Idea : Extend the life of your beetroot. After peeling, store it in the fridge in a sealed plastic container for up to 10 days.
Beetroots from the local fields are available from October until well into the winter.
